TWD – Lemon Loaf Cake – Part Deux – Trifle

Wasn’t there a movie with …Part Deux in the title?  I always thought that was funny.  So, here is my part deux with the Lemon Loaf Cake from earlier this year.  At the time I made it, I did not like the cake and put it into the freezer with the thought of using it in a trifle in the future.  Well, Memorial Day was the perfect opportunity to make that trifle.

I took the cake out of the freezer and let it defrost overnight on the counter.  Then I proceeded to slice it thinly and lay it into the bottom and sides of my wooden salad bowl.  Of course it would have been so much nicer if I had a proper trifle bowl, but I don’t so I had to make do with the salad bowl.  Anyway, I have to say that I tasted the cake and this time LOVED IT!!! I think it picked up the deeper lemon flavor from having sat for a while.  And the sparkling sugar I had sprinkled on the top of the cake really was a wonderful addition.  It gave it a nice textural crunch to the cake.

My purpose in making the trifle was to use the lemon cake.  Therefore, I did not want to spend a lot of time making the other ingredients.  I used the Quick Lemon-Berry Trifle recipe from the back of the Jell-O lemon pudding box.

I used blackberries and strawberries in the trifle, and layered the lemon pudding with the fruit and then topped the trifle with plain Cool Whip.

I love lemon and this was very refreshing and perfect for our Memorial Day barbeque.

  1. Marlise, what a clever way to make use of the recipe for Lemon Loaf Cake – it looks just delicious! I have never prepared a trifle but I have always loved the idea of it.
