Here is the rewind week. This is the week to make up a recipe I missed. Since we started in February, the only recipe I missed was the Berry Galette. Now that it is Autumn and berries are pricey, I decided to make an Apple Galette.
The other Tuesday with Dorie bakers made this recipe back in August. You can find the recipe at The Kitchen Lioness or Tomato Thymes.
The pastry dough was easy to make. I used my food processor. The recipe had you dividing the dough in half to make two galettes, but I did not do that because I wanted one big one.
After a rest in the refrigerator, the dough rolled out easily to the required size. Placed on a baking sheet, I added chopped gala apples, toasted walnuts, and dark raisins, then added sugar, honey, and butter.
Then I folded over the edges of the pastry dough. Finally, I lightly brushed water on the surface and then sprinkled sugar on top.
In the oven and out it was nicely browned and actually really pretty. We tried it when it was room temperature and it was very good. The sugared pastry dough was the best part.
I kind of thought that the apple/walnut/raisins might have benefited from a soaking in some red wine, like in charoset. But overall, this was good. I bet the berries would have made it awesome.

Tell me about it! My street has 4 enormous trees down across the road and the power line are down too. We also have one house with a tree on top of it. Luckily I have family in the area to help. I am glad you faired better. Looking forward to reading about your loaves.
Your galette looks so yummy. I love that you made one big one! I imagine this would be great still warm with a scoop of vanilla ice cream melting on top. I just started with this group and I haven’t seen a rewind recipe I haven’t wanted to try! (yours included!)

Marlise, you made a wonderful autumnal Galette, I love these Galettes with apples and raisins – I did not post for once, somehow with the hurricane, I assumed no one would really be in the mood for posting.I am really relieved to read that you and your family are doing well, seeing the photos of all the damage that Sandy has caused really is heartbreaking and I was thinking of you and hoping all would be well. Hopefully, things will be back to normal as soon as reasonably possible! Do take care!
Thank you for the concern Andrea. My family is fine. We still do not have power unfortunately (no heat, lights, tv, etc). I am hoping we have power on Monday so I can make and post the next recipe. : ) I made the muffins last week and they were delicious. I want to make them again to post.
