Maybe I should have asked for a stand mixer for my birthday…
Over the weekend, I made the first recipe in the Baking with Julia challenge, White Loaves. Thanks to Jules and Laurie for hosting and making a great selection. The recipe can be found on Jules’ blog http://someonekitchen.blogspot.com. My kids were ready to help with this one.
This is the second time in recent memory when I did not think the yeast mixture was bubbly enough. I let it sit a little longer than required this time to make sure it was good. I followed the recipe exactly, except that I mixed with a spoon and kneaded with my hands. It wasn’t too bad doing it by hand. My daughter L helped too.
No problems with the double proofing. I used one glass and one metal loaf pan. The metal did a better job of browning all sides of the loaf. But since that pan was larger than specified in the recipe, I did not get the nice head on top of the loaf. This did not hurt the flavor any. The bread had that nice yeasty smell and tasted really yummy. I am looking forward to making more bread from BWJ and the Tuesdays with Dorie group.
