I am always impressed when I can make something that I can find at an expensive bakery. That was the case with this Almost-Fudge Gateau from Dorie Greenspan’s Baking from My Home to Yours, on page 218. It was as beautiful as it was delicious. Very chocolaty. Very expensive looking. Everyone loved it.
I used wax paper strips to keep the cake plate clean while I was glazing. It worked out great. This cake was as perfect as I have ever made. I will be making this again.
