This was the best carrot cake I ever made, and one of the best cakes I ever made. The occasion was my sister Loren’s birthday. She loves carrot cake. Last year I made her one from Ina Garten. That was really good. This year I made Bill’s Big Carrot Cake from Dorie Greenspan’s Baking from My Home to Yours, page 254-255. It was out-of-this-world awesome.

This cake used 3 full 9″ round cake pans. I added 1/2 cup of drained crushed pineapple to the dried cranberries, carrots, walnuts, and coconut filling. The cream cheese frosting was applied in a novel way. And I used 1 tbsp of pineapple juice, plus 1/8 tsp of lemon extract to the frosting, instead of lemon juice. Boy was it delicious.
We served it today for Loren’s birthday. There were 10 of us. We had 1/4 of the cake left at the end. As I normally do, I gave her the remainder of the cake to take home. But let me tell you, it was hard to part with it. It was that good.
I bet I know which cake I will be making next year!
