Well, I did it. I made another salad from Around My French Table, by Dorie Greenspan. I chose Helene’s All-White Salad, p.108-110, because it looked easy and I would have to make a mayonnaise, which I liked.
Preparing the vegetables was pretty easy. I used my peeler to make the long ribbon pieces of celery as suggested. That was a bit labor intensive. But I was able to take numerous interruptions throughout the preparation process, which always works out well for me when I am watching my two kids.
I made the mayonnaise in a bowl with my whisk. It was easy enough to do, although it is hard to slowly drip olive oil into a bowl while still whisking.
After mixing the ingredients, I put it into the refrigerator to meld the ingredients a little. Tasting it later, it was good, again not wonderful, but good. I would have added another apple or some raisins to the dish for additional sweetness.
I am going to do another salad in a few days. I don’t know which one yet, but I need to keep the momentum going.
