Before I purchase a cookbook, I always create one or two of the recipes to make sure they work. If they work then there is a good chance the other recipes will work too. The Tuesdays with Dorie Bakers are starting a new bake along using Dorie’s new cookbook Dorie’s Cookies. I haven’t bought the book yet because I want to run through a few recipes available online. The first is Chocolate Creme Sandwiches. These are 2 chocolate discs with a salted vanilla cream inside. They are YUM delicious.

My cookies turned out wonderfully.
One issue I had was that I made the chocolate dough and instead of rolling it out flat and putting it in the freezer for an hour, as the directions indicated, I made a flat disc and put it in the refrigerator overnight. So the next morning, I had to beat the dough flat and roll it out. It would have been easier if I had followed the directions.
The recipe made a lot of cookie dough. Each time I cut out a circle, the dough in between had to be rerolled and cut. But since I did not have time to do that, I gathered up all the extra dough, made it into a ball, and put it in the freezer for another time.
Another issue was that I had a lot of filling, and I did not know how much to put on each cookie half. The directions said to use 1/2 tbsp, but that still left me with a lot of filling. So, instead, I portioned out all the filling evenly on half the cookies before adding the tops. This way I was left with no filling and had fully stuffed cookies.
What I liked best about the cookies were the salted filling. It was a surprise to taste the salt, but it made it soooo good.
These were definitely worth the effort. Try it for yourself!
